Cream of Tomato Soup with roasted Italian Chickpea Croutons – Oh She Glows

For my latest YouTube video, I decided to make a recipe from one of my favorite cookbooks: Oh She Glows by Angela Liddon. Since I had never made a soup from the book before, I chose the ‘Cream of tomato soup with roasted Italian chickpea croutons.

This recipe is fairly easy and there is not a whole lot of vegetable chopping involved. You need to start off by coating chickpeas with oil and some spices. Then you roast them. For the soup, you have to sauté onion and garlic. Then you just blend the onion and garlic with all of the other ingredients, heat this mixture and add spices.

The soup itself is very thick and, because of the cashews, creamy. The sun-dried tomatoes give it more depth of flavour. Very tasty. The chickpeas get crunchy on the outside but stay soft on the inside. They are a nice snack on their own, but are amazing with the creamy tomato soup. This, in combination with some bread makes for a great hearty meal, perfect for the colder days.
